Apparently Winter Has Just Arrived- Easy Minestrone Soup

Seriously… everyone was talking about how this was going to be the worst winter in history for Chicago.  You know, the one that was going to send you over the edge and make you finally move.  Not so much.  It’s been the absolute most mild winter I’ve ever lived through (of course, I AM from Wyoming where 5 feet of snow on the side of the road for 6 months straight is normal).  Anyway, now it’s hailing and it’s supposed to snow soon so I thought a comforting soup might be just right for tonight.  Serve this up with some crusty bread (one of my favorite things is bread & butter dipped in soup) and a salad and you’ve got yourself a meal!
